It's a fantastic film but I tend to agree with John - it could do with 30 minutes shaved off.
I don't know of many other films with that kind of single-take shot but of course the first shot in Touch of Evil is famous (and probably more impressive, considering the time)

Goodfellows is the perfect length. There's nothing I'd cut from it.

Rope was shot without cuts in the scenes, but I don't remember it having elaborate tracking shots like the Goodfellows/Touch of Evil examples. If you want a good example of that from Hitchcock then have a look at the the shot in Frenzy near the beginning where it tracks into the flat.

Tati's PlayTime has some long and very diligently choreographed shots.
And there's a famous Russian film - haven't seen it, can't think of the name now - that's supposed to look, at least, like it's all one shot... musical, I think... anyone know what I'm talking about?

I voted "yes" but only because I really like the film. My Film savvy friends flipped their nuts for "Taxi Driver" when it was new. I like it WAY better now than I did then but I attached my star to the wagon of their enthusiasm. we saw "Mean Streets" and eventually "Who's that Knocking at my Door" which were much easier for me to praise without feeling the need to take a shower.
I think "Good Fellas" is the fruit of his early promise. (at least in terms of the "guys in the neighborhood" end of his pool.)
So, I defend saying it's the best even though part of what I like about Marty-Baby is that he wears his influences on his sleeves. you can see the greatest hits of European Art House movies informing his films. I think, until he made "age of innocence" that "good fellas" made the strongest case that he'd seen and enjoyed a lot of Visconti.
Marty's camera glides around the boys from the neighborhood as gracefully as LV's & Renoir's cameras embraced the upper classes. I think that's how style works sometimes. you pour the wine you like in different bottles and end up with a different experience.
other contenders IMO for "greatest single shot" would be the "touch of evil" shot (which can't be mentioned enough), the "oh my god, look at this war" shot in "GWTW", the "key shot" in "Notorious" and the "whoosh up the side of the building and go through the window" shot in "the Crowd.

There was a great article in this weekend's NY Times about gangster movies, highlighting Goodfellas and The Godfather. One of the main points is Goodfellas was about the street soldiers where as most Gangster Movies were more about the kingpins, like the Godfather.

Brilliant film. My favourite. Never tire of watching it, and introducing other folks who may not have seen it.
That shot is wonderful, but I don’t know about the best. I don’t care so much about the ‘single take’ thing.
I love the ‘Layla’ shot, with the dead wiseguys, especially Carbone and his frosty hair. The shot in the diner, with the changing perspective. The shot of Bobby watching Lorraine walking up the street, shitting herself... it’s a long list.
Even the back 30, when Ray’s coke paranoia is killing him...
Their collective best film.
The Godfather is equally splendid, but Goodfellas has an edge, rooted in some sort of authenticity, however dubious that might sound.
Donnie Brasco for third.

The Godfather was laughed out of it though by real wise guys i think i remember reading, whereas Goodfellas was more like "yeah, 90% true".
