I've found a great way of doing courgettes. Fry them in butter, but - and this is the magic ingredient - add a bit of chilli paste and soy sauce. The results are a taste sensation!

With meat? spinach? All from scratch? It's a big job! Meat, spinach, ricotta, bechamel, all that stuff. Total trad style. I'm going to use tomato sauce from a jar to save a bit of work, but the rest (apart from the noodles) will be from scratch.

Salade Niçoise, very nice - unfortunately can't do now owing to vegetarianism, but used to be a favourite. And I know I could leave out the anchovies, but then it would not be a Niçoise, would it?

Well, as you might expect there's a fair bit of debate about that. I think potatoes are the most controversial ingredient but I like to put 'em in for a bit of ballast.
