With meat? spinach? All from scratch? It's a big job! Meat, spinach, ricotta, bechamel, all that stuff. Total trad style. I'm going to use tomato sauce from a jar to save a bit of work, but the rest (apart from the noodles blankets) will be from scratch. Christ on a bike. Is that ^^ better??

Small question, but one that's been bugging me:
if you cook, what's your towel set-up? do you have a hands-drying towel? is it a bathroomy towel with a nap? doesn't it get smelly if you're wiping your hands after cutting garlic or onions? in that case, do you wash it often? or do you just wash your hands often and then dry them on it? isn't that a pain to do when you've got several things on the go?
and do you use tea towels to dry dishes? don't those things leave tiny little threads on the glass surface?
what about disposable kitchen towels? they're useful, aren't they?

My local cafe does a deadly Pastrami sandwich. Pan-fried milk bread, mustard, with Swiss cheese, pickles, gherkins and a bit of chili sauce for heat. It's absolutely outstanding.

A tea-towel, just for drying my hands on after washing 'em. Kitchen roll for wiping hands mid-choppage, after handling the ingredients and all that, if a full handwash isn't required. Never dry dishes, just leave 'em to air-dry in the drainer. Much more hygenic.
