I’m not entirely sure I’ve heard covers of it, although I probably have and have just erased them from my memory.

This is a cracking version, but i don't love it quite as much as the original...

I like the two I recall, Johnny Jenkins and Humble Pie, but neither beats the original.

I know Weller's cover as well, and no it's not better than the original.

Marsha Hunt and Humble Pie both did worthy versions, but neither beats the Dr.

The first thing I think when I hear the Dr. John version is "gosh, I wish some boogie band would do this for five or six times as long."
Not a big Humble Pie fan in general, and I think their version is pretty good evidence for the prosecution.

I'm obsessed with the track at the moment. I've always loved it, but listening on headphones a few days ago brought home what an absolutely thrilling piece of production it is. I mean, you can cover the song*, but it's really what's going on behind that (incredible) vocal that makes it special. All those spooked sounds create something that seems unearthly, and unlike a lot of 60s classics that have a similar vibe, this one's resilient, at least partly due to its mean spirit (voodoo rather than hearts and flowers). And it's BUILT, rather than written. There are almost no 'conventional' rock drums as far as I can hear - there are congas, bongos, various percussion instruments. But that barely audible guitar snap that appears 46 seconds in! The break that occurs around 5:30 (and when it all falls back in, about 30 seconds later). And those backing vocals! (with Shirley of 'Shame Shame Shame' fame, apparently - and you need the stereo, of course). * The song has subsequently been performed and recorded by many other musicians, including Widespread Panic, The Neville Brothers, Cher, Marsha Hunt, Johnny Jenkins, Humble Pie, King Swamp, the Allman Brothers Band, Paul Weller, the Flowerpot Men, Michael Brecker, Tedeschi Trucks Band and Jello Biafra. en.wikipedia.org/wiki/I_Walk_on_Guilded_Splinters

It's wonderful, isn't it? I love the whole album. Shame he didn't continue in that vein.
