Never understood the fuss with Patatas Bravas, but maybe I've not had a really good one.

apparently, the french have their version (with egg, which makes it a mayo in my book) In my book, and the rest of the world's, to make it Mayonaisse ( btw origin of which is Spanish ' from Mahon') you would need the key ingredient Mustard. ffs! from the recipe YOU posted! Garlic Aioli Recipe Ingredients: 1 clove Garlic 2 ea Egg Yolks 1 tsp Mustard1 tsp Water 2-3 oz Olive Oil 3-4 oz Vegetable Oil As Needed Sea Salt As Needed White Pepper

There is no such thing as 'authentic' food! What do people mean when they say it? that's more to the point. The term exists, it has meaning to people. WHAT IS THAT MEANING?

What they are aiming for is the notion of an idealised, finished thing as it were that we should judge others by. A hallmark. Particularly when it comes to regions or food "nationalism" for want of a better phrase, there is a sense of a "this is how it is done", which I guess is an understandable thing. But on the flipside, the reality is that food is not subject to borders, language or any of those other things. I'd say that in this chat, as I've said before, there are outliers and Sushi/Sashimi I think is one - it is very difficult to think of another food that is as distinct in its preparation, appearance and general culture.
