what's always in your pantry?
tabasco - as i've posted many times before, i'm a big fan of hot sauces and chop and change them. however, tabasco is always there to call upon.
coleman's mustard - the king of mustards
sriracha sauce - i prefer it to ketchup
hellman's VEGAN mayo - wonderful stuff
calçots sauce - a spanish favourite
HP sauce - the best brown sauce out there
probably missed some off, but they're the ones that instantly spring to mind.

In pantry
Tabasco or some kind of Louisiana hot sauce
Three or four different kinds of Mexican hot sauce.
Worcestshire, although this might not be considered a condiment.
A1 steak sauce
In fridge
Ketchup
Chili/Cocktail sauce
About four or five different mustards - yellow, honey, dijon, deli, hot and sweet, Chinese mustard
Horseradish
Green and red taco sauce
Mayo
Ranch dressing
Chutney
Pickle relish
And other stuff like pickled jalapeno slices, pickled okra, kimchi, sauerkraut

Everybody in southern California expects you to have a bottle of Tapatio. they might drop by just to check.
I also like to have some brown mustard around. we always have Heinz Ketchup. my wife's people are from Pittsburgh so any other brand of ketchup is taken as an insult.

I always have a selection of chilli sauces, Dr Burnorium's chilli sauces in particular are fantastic. The ghost pepper and scorpion pepper are superb for spicing up any food with just 4 or 5 tiny drops, absolutely packed with flavour.
Other than that, I always have a wholegrain mustard and a dijon in stock, no specific brands. Horseradish, too, goes great with smoked salmon, which I discovered via Lidls cheap smoked salmon offerings. Worcestershire sauce, HP. Dat kinda thing.

We get some chutneys from NT gift shops:
Garlic and Nigella Seed Gooseberry and Coriander
Both brilliant
Also, Maggi Tamarind Sauce. Great.

I have 6 different types of aioli or mayonnaise in the fridge atm, depending on the direction I want my sandwiches to take:
Mayo Aioli Extra garlic aioli Chipotle aioli Sriracha mayo Chilli jam aioli
Also BBQ and tomato sauce, my wife loves a chutney but I have no idea what the fuck she's packing

I'm a bit amazed at how many condiments people have. I pretty much do with mayonaisse, dijon mustard, worcester sauce, seafood sauce, tartare sauce, mint sauce, horseradish, brown and tomato sauce and a chutney. That's quite a lot when I put it like that! But some of those things I'll only use with a particular meat.

Dill relish, mayo, dijon mustard (or honey mustard as long as it's got some kick), and barbeque sauce, and that's about it for me.
I like chutney but don't use it much. An Irish place in Santa Monica (LA beach community) used to make chutney & cheddar sandwiches that were really tasty.
Can't stand ketchup. A little salt on my fries...err, chips is all I need.
