Asparagus. Lightly grilled and that's it. Obvs massively depends on whether they are in season. White Asparagus can be good too.
Aubergine = Baba Ganoush. Perfect dish with turkish/levant meze.

Artichokes are a big crop from south of San Francisco down to Monterey in Northern California. You can get artichokes as an appetizer at almost every restaurant along the coast.

I'm not entertaining anybody. I voted asparagus and aubergine because I like them, although truth to tell I could have voted for any of those listed.

Mushrooms for me, though I can't think of any meal where they elevate the food to stuff worthy of the Gods, I just chuck 'em in everything. Then voted for peppers, though I think asparagus could well be a wiser choice.

Serve with rustic Portuguese bread, and a dry Riesling. Or a Mediterranean salad that would include sliced beets, and a habanero dressing made with a syrupy balsamic and olive oil. Don't like mushrooms, eggplant, or asparagus. Unless the latter was in season, then I might use it as a grilled garnish (sprinkle of lemon at the end) on the salad.

I went for mushrooms and aubergine. Although it Preludin pained me to leave out asparagus. You're all overrating peppers.
