Mash tatties is one of those foods where you feel you have it once a week, every week. A real treat. I had sausage and mash the other night and it was lush. How do you do it Dougie? The best way I've found is to do your onions and gravy while you roast the sausages, and then pour it over them and return to the oven to finish cooking. That way the whole thing thickens and congeals and you get all the juices in the gravy, which should go wonderfully thick and dark.

That's fine. After you've made it, add it to the sausages in the pan. You'll be amazed at the difference.

I used to like Smash, gravy and a Tesco loaf for tea. Spread the mash on the bread (heavy with the butter), dip in gravy and you're living the dream.
