One of life's problems that it actually feels good to have (because if that's my most pressing qualm at the moment, life is pretty good ) So, I've been making blueberry muffins for a long time. Pretty much always the same recipe. No problem. Recently though, I decided to try to make blueberry-oatmeal muffins. Good idea huh? The only problem is that the recipe I have and like, asks for a half-cup of honey. Now that's way too dear. Sorry. So, the first time around, I diluted what was left in one honey jar I had in the pantry with hot water, and then poured a bunch of brown sugar in the mix. I used that instead of the honey requirement. The result was OK, but not great. So next I tried to just use a half-cup of brown sugar alone. The resulting taste is good but the texture is unsurpringly far too dry. Any suggestions? What could I try as a replacement for straight honey? I like things sweet btw. And I live in blueberry heaven, and I'm a big fan.

I use cheap honey for cooking - you can get a jar for 79p here. No chance of that? It lasts almost forever, you know 🙂
