Mince and tatties is godhead food, and I've never been further north than Edinburgh, and then only on a day trip from Northumbria. My Auntie Ciss, who was in the 1930s the chief cook at a London Bus Garage, used to serve it up regularly (as well as cottage pie, which is basically the same thing). These middle class Cumbrian nonces with their fancy condiments don't know they're born.
And G's right about sausages, too. Gravy doesn't have to be fancy, but finishing it off in the pan with the sausages (which of course should never be pricked) takes it up several notches.

Cottage pie looks a hell of a lot at our shepherd's pie.
Here's a cute one from Canadian (not)history: The pâté chinois, as it is know in French to Quebecois, was called this because it was made in huge batches and fed to the immigrant Chinese workers working on the building of railroads way back when.
Apparently real history says nah to that.

I have a stew quite a lot. Two of my favourite meals are cassoulet and fabada. Beans and meat, basically. Good lad. I like tinned cassoulet, actually. The stuff you get in French supermarkets. Big fat cans that you warm up in a pan. Lovely. You've never been able to get them in the UK.

That's the kind of stuff I could live on. Yeah I like a nice meal out and I absolutely appreciate the higher end stuff but I'm a simple man too (as wanky as that sounds). I like bangers and mash and egg and chips. I have egg and chips every Sunday night now!
If I retire to France it'll be cassoulet and a nice glass of local red for lunch followed by a nice long nap every day. Watch the world go by. Maybe start snouting again. That's my dream.

I have a very fond memory of being served Cassoulet in the Languedoc. Tiny little village, the sun setting a dark amber colour behind the faint shadow of the Pyrenees, Cremant de Limoux beforehand, and then a steaming bowl of beans, goose fat and sausage.

I had some mad pangs yesterday but they come and go of course and I'm over the worst. I went to pick up a new tap (my bathroom tap has been leaking for weeks and makes all kinds of weird, whistling noises...it's been driving me mad) and of course I saw my dealer in the street and it was like a scene in a cartoon or a movie where the devil appears and extends his hand... "you want this...don't you?". "Yes, yes I do". I crossed the street and sped off down the road. It was quite funny really. RUN AWAY DOUGLAS, RUN AWAY! All I needed was the fucking Benny Hill music. I'm getting there. I can be quite disciplined when I set my mind on something. I'm weaning myself off the bad things gradually...fags, weed, booze, ... I know your hash supply is drying up and you might have to come off shit too. Good luck mate, it does get easier.
